Recipe - Russian Chicken


Makes 4 - 6 servings

This is such an easy and yummy chicken recipe and has been one of the tried and true meals that we've made for many, many years now. To get started, you will need the following ingredients:

4-6 boneless, skinless chicken breasts
1 package Lipton onion soup mix
1 - 8 oz bottle of Russian dressing (or half of a larger bottle size)
1 - 8 oz apricot preserves
Fresh ground pepper blend

Directions ---

Preheat oven to 350 degrees

Rinse chicken breasts and pepper lightly on both sides with fresh ground pepper blend (I also add a little sea salt as well)

Combine Russian dressing, apricot preserves and Lipton onion soup mix in mixing bowl and mix thoroughly. (I'm a bit of a freak and for some reason add about 2 tablespoons of KC Masterpiece bbq sauce to the sauce as well....it's not part of the recipe, but I feel like it gives it a bit more oomph and more of a smoky undertone to the flavor. Just my personal preference though)

Place the chicken breasts in a casserole dish and pour the dressing mixture over the chicken covering entirely and evenly throughout the casserole dish.

Cover the casserole dish with aluminum foil, but do not cover too tightly. It works best if it is a bit looser and if you kind of create a domed effect with the foil over the dish.

Bake in oven at 350 degrees for 1 hour and 15 minutes.

****I always serve this atop white rice and then with a side such as green beans or broccoli, but just about any veggie would complement it nicely.

Funny! I make this same thing, but with a can of cranberry sauce (the kind with the whole cranberries) in place of the apricot. Its our version of cranberry chicken!
